Sunshine Sauce

As we head into the lighter and brighter months of the year, I want to share one of my all-time favorite recipes with y’all – Sunshine Sauce!

A few years back, my family spent a couple of weeks on Cortez Island on the coast of British Columbia, Canada. While exploring the island’s beauty, we made a trip to the Hollyhock retreat center.  A friend highly recommended their food, especially their dressings. This is where my love affair with this delicious and nutritious sauce began.  I’ve continued to modify my sunshine sauce and make it regularly.  Trust me when I say that you’ll be pouring, not drizzling, this sauce on everything from fresh salads to roasted vegetables.

Ingredients – makes 2 cups

  • 3/4 cup Nutritional Yeast (lovingly called “Nooch” by many)
  • 1/3 cup Water
  • 1/3 cup Apple Cider Vinegar
  • 1/3 cup Soy Sauce, Tamari, or Bragg Liquid Aminos
  • 1/2 cup Olive Oil
  • 2 tbsp Sesame Oil
  • 2 tbsp Minced Garlic
  • optional:  1/2 – 1 cup Cashews (depending on how thick you want the sauce!)

Instructions

  1. Add all the ingredients except for the oils into the blender and blend on high for 1 minute.
  2. With the blender on high, remove the centre of the lid and SLOWLY drizzle in the oils. Stop the blender as soon as all the oil has been added. *This pro tip comes from my food-loving assistant, Lex!  And it helps create a stable emulsion, where the oil and water-based ingredients mix instead of separating. (thanks, Lex!)
  3. Optional:  To thicken the dressing, soak the cashews.  There are two methods: a fast and a slow way! Soaking cashews overnight in cold water keeps them raw, which helps them retain more of their nutrients. However, if you can’t plan that far ahead, you can use the quick-soak method: pour boiling water over your raw cashews and let them sit for 1-2 hours. Regardless of which method you use, make sure to strain the cashews before adding them to the blender.
